The holiday season brings up nostalgia and memories from the past. We’d like to share a story about a Bethany resident named Verna Anfinrud, who recently spent time with us to share memories and make lefse.
Verna’s mother-in-law Betsy was “champion lefse-maker”. She came by her expertise naturally, of course, as both of her parents immigrated from Norway on a sailing boat, living off homemade hardtack and cheese. Betsy knew the recipe by heart, reciting “a pinch of this, a little of that”, etc. Verna explained that she had the privilege of learning the proper lefse procedure and technique by looking over Betsy’s shoulder while she made it.
“Making lefse has become my labor-intensive hobby! I do make myself available where there is interest in learning the art. I am grateful to Betsy for sharing this skill with me.”
